The Hoya de Cadenas Estate, 90 km inland from the city of Valencia is a winemaking paradise situated at 800m above see level. The Chardonnay variety is one of the most recognised and widespread white varieties in the world and is very well adapted to the unique climatic conditions at the Hoya de Cadenas Estate. The vineyard is located in clay and limestone soils and the significant difference between night and day temperatures allows for an intense concentration of polyphenols.
Wine – making process:
The grapes are harvested before sunrise during the third week of August. Dry ice is used to cool the grapes during transportation to the winery to maintain the subtle aromas in these grapes. A long and cool fermentation is carried out at a temperature of 15ºC, allowing for greatest varietal expresion.
Recommended with seafood, salads, and all kind of white meat.
This Brillant Chardonnay has an outastanding pale yelow colour. On the nose its intense aromas comprises of mixture between tropical fruit and white fruits. In the mouth it is very fresh with a good balance between acidity and fruit. The lengthy mouth-watering finish is marked by peach aromas.
