After keeping a careful eye on the ripening process, the night harvest is carried out in the month of September to take advan-tage of the cooler temperatures which help to preserve the aromas. The grapes undergo cold maceration in order to accen-tuate the must’s aromatic intensity, before controlled fermenta-tion at low temperatures over a period of 18 days.
