After keeping a careful eye on the ripening process, the night harvest is carried out in the month of September to take advantage of the cooler temperatures which help to preserve the aromas. The grapes undergo cold maceration in order to accentuate the must’s aromatic intensity, before controlled fermentation at low temperatures (14-16ºC) over a period of 20 days.
Seafood, poultry, salads and fresh cheese.
An attractive straw-yellow colour with greenish iridescences. Its bouquet tropical fruits (pineapple and passion fruit). On the palate, its fresh, unctuous and with citrus notes that remind of grapefruit. Its end is tasty and long.
