The grapes are harvested during the first fortnight of September. After a short cold maceration period followed by sedimentation the must is fermented, with absolute limpidity. Fermentation is slow and at 18ºC to preserve the valued raw material.
Recommended with aperitif, starters, salads, fish and sellfish.
Limpid and translucent, pale yellow in colour with iridescences which bring to mind white gold. The varieties demonstrate their potential in the bouquet with the harmonious conjunction of acidic fruit aromas (orange, lime and orange blossom) and herbal aromas (fennel and aniseed). The bouquet is confirmed on the palate and the sensations are set free: initially fruity, then giving way to a sensation of volume and balanced with acidity afterwards. A harmony that can leave no one indifferent.
